Pediococcus damnosus

Genus/species (aliases): Pediococcus damnosus

Gram Stain: Positive

Morphology:

  • Cell: Spherical cells (0.3-0.6 mm in diameter) that form short chains or tetrads. Non-motile, do not form spores or capsules.
  • Colony:  Round colonies with cream coloring.
  • Liquid Growth: dispersed

Oenococcus oeni

Genus/species: Oenococcus oeni (Leuconostoc oenos)

ellipsoidal to spherical cocci, often in pairs or chains

Colony Morphology:

Colonies develop after a few days.  They are typically less than 1mm in diameter, smooth, round and greyish white.  Colony growth is optimal at 20 to 30ºC on a sugar and protein rich medium that contains tomato juice substrate or grape juice.

Lactobacillus vini

Genus/species: Lactobacillus vini


Gram Stain: Positive


Morphology: 
Cell: Rods; 0.49-0.82 micro meters x 1.36-2.8 micro meters; single cells or they grow in short chains (chain formation depends on the pH of the medium and growth stage of the microorganisms);
Colony:0.7–1.5 mm in diameter, with entire edges, smooth, glistening and white (Rodas et al).
Liquid Growth: likely dispersed.

Gram Stain: Positive

Morphology:

Cell:  small (0.5 – 1.2 x 1.0 – 10μm), elongated rod-like bacilli assembled in pairs or in chains of variable length

Colony:  punctiform, convex, entire margin                 
Liquid Growth: dispersed

Lactobacillus paracasei

Genus/species: Lactobacillus paracasei

Gram Stain: Positive 

Morphology:
Cell: Rods. 0.8-1.0μm. Single or chains.
Colony: small round creamy-yellow colonies
Liquid Growth: likely dispersed

Physiological Traits: 
Grows on tofu whey and uses fructose, glucose, and sucrose.

Genus/species: Lactobacillus nagelii

Morphology:

  • Cell: rod-shaped
  • Colony: opaque with smooth edges, 2 mm in diameter

Physiological Traits:

Lactobacillus mali

Genus/species (aliases): Lactobacillus mali (Lactobacillus yamanashiensis; 70-95% similar, not identical)

Gram Stain: Positive

Morphology:

  • Cell: Rods: .6-.8 x 2-4 microns: single, paired, in chains palisades in irregular clumps, often forms chains of 5-8 cells long.
  • Colony: Die if repeatedly cultured at 27 degrees C.
  • Liquid Growth: likely dispersed

 

Lactobacillus leichmannii

Genus/species (aliases): Lactobacillus leichmannii 

Gram Stain: Positive

Morphology:
Cell: rod-shaped 
Colony: about 1 mm in diameter                 
Liquid Growth: likely dispersed; morphology on liquid growth could not be determined. 

Physiological Traits: 

Lactobacillus kunkeei

Genus/species: Lactobacillus kunkeei 

Gram Stain: Positive

Morphology:
Cell: rod-shaped cells 
Colony: thin, almost translucent colonies, off-white in color
