This annual meeting highlights research conducted by the Department of Viticulture & Enology at UC Davis. Its focus is those results that directly impact the international wine industry.
RAVE 2011, entitled "Microbes of Flavor" will feature discussions on our new winery and how it will aid research into flavor; grape amino acids as precursors to wine flavor; microbial conversion of sulfur compounds; new tools to examine the actual microbial content of wine; ethanol tolerance; ethanol yields; metabolomic analyses of Brettanomyces; and new revelations on stuck fermentations by genomic analysis.
