Our latest in the Wine Flavor 101 Issues Update series of instructional seminars is focused on a topic that has often been requested by attendees as one they would like to see addressed more often: the use of oak barrels and oak alternatives in winemaking. Whether your winery is small or large, the decisions you make about the role of oak in your program is critical, both financially and to your targeted wine style. After your selection of cultivar and vineyard, oak choices may be about the most important winemaking decision each year. Since many of you told us you?d like to know more about the impact, chemically and sensorially, of oak to wine style, we?ve put this program together to address that need.
Remember: these classes are targeted specifically to wine and winegrape industry professionals and, as such, are technical in nature. The information discussed is much the same as that presented to students in the V&E major at UC Davis, and assumes the registrants have some experience with wine chemistry. Register early as these classes have been very popular and often sell out before the event date.
