Our latest in the Wine Flavor 101 Issues Update series of instructional seminars is focused on the critical role of several key winemaking decisions on resultant wine quality or composition. Whether your winery is small or large, the importance of pressing protocol, skin contact, oxygen inclusion/exclusion and tannin additions is universal; these are all topics that most certainly impact the style of wine you make every day. These are all issues you have told us youd like to hear more about, so weve put this program together to address that need.
Remember: these classes are targeted specifically to wine and winegrape industry professionals and, as such, are technical in nature. The information discussed is much the same as that presented to V&E students at UC Davis, and assumes the registrants have some experience with wine chemistry. Register early as these classes have been very popular and often sell out before the event date.
