Yeast strain affects pyrazines and sensory profile in Cabernet Sauvignon wine

Does it matter what strain of S. cerevisiae do we ferment our Cabernet grapes with? Yes it does. Particularly if our grapes are not as healthy or aromatically "ripe" as we would like them to be.
