A review of pyrazines in grapes and wine

This article won the Amorim Academy's prestigious award in 2003 for the best research paper for Dominique Roujou de Boubee. It is an excellent review of the state-of-the-art in pyrazine research and also includes practical tips on dealing with these compounds in the vineyard and in the winery.
